Quick Lemon Pie in a Glass (Ready in 15 Minutes) – Madeira Island Style

Quick Information

Preparation time: 15 minutes (+ 2 hours in the refrigerator)

Yield: 4 to 6 glasses

Difficulty: Very easy

Ingredients

1 can of condensed milk (395 g)

1 carton of heavy cream (200 g)

½ cup of fresh Persian lime juice (approximately 3 to 4 limes)

100 g of crushed Maria or Maizena (plain tea) biscuits

Lemon zest for garnish

Instructions

Prepare the biscuit base:

Crush the biscuits in a blender or by placing them in a food-safe bag and using a rolling pin. Distribute a layer at the bottom of individual glasses.

Prepare the cream:

Using a blender or a whisk, mix the condensed milk and heavy cream until smooth.

Achieve the perfect consistency:

Gradually add the lime juice, mixing gently. You will see the cream thicken naturally—no gelatin required!

Assemble the layers:

Create alternating layers of the lemon cream and the crushed biscuits until the glasses are filled.

Finish and refrigerate:

Garnish with lemon zest on top and refrigerate for at least 2 hours before serving, so it becomes firm and nicely chilled.

Meringue Ingredients:

2 egg whites

4 tablespoons of sugar

Topping Instructions:

Beat the egg whites until they form stiff peaks.

Gradually add the sugar while continuing to beat, until a glossy, firm meringue forms. Place the meringue on top of the lemon cream in the serving glass.

For a golden effect (optional): Use a kitchen torch, applying it delicately over the top, or place it in a preheated oven under the broiler (grill) setting for just 2 to 3 minutes (be careful not to let it burn!).

Garnish with a cookie or some lemon zest, and serve well-chilled.
