Madeira Island Style Recipe: Country-Style Chicken with Spaghetti 🧑🍳
A dish of country-style chicken with spaghetti is an excellent idea for a family lunch. Quick and easy to make. And spaghetti is, after all, the favorite food of most children. Serve with cooked broccoli.
Ingredients:
300g broccoli, 1 teaspoon water, 1 teaspoon salt, 200g spaghetti, 150g onion, 4 cloves garlic, 1 stalk celery, 3 tablespoons olive oil, 1 bay leaf, 600g tomatoes, 1 dl white wine, 1 teaspoon ground pepper. Ingredients:
350g cooked and shredded chicken
50g black olives
Preparation:
Cook the washed and separated broccoli florets in an uncovered pot of boiling salted water. When tender, remove with a slotted spoon. Cook the spaghetti in the same water until al dente.
In a pan with olive oil, sauté the chopped onion and garlic cloves, the finely chopped celery stalk, and the bay leaf. Cook over medium heat, stirring occasionally. Add the peeled, seeded, and chopped tomatoes. Cook until the tomatoes are soft and pour in the white wine. Season with salt and pepper and let it simmer until thickened. Add 5 fresh basil leaves, remove from heat, and blend with an immersion blender.
Add the shredded chicken and return to the heat until it comes to a boil.
Drain the spaghetti and serve with the chicken in tomato sauce, garnished with black olives and fresh basil leaves. Serve with cooked broccoli.
