Almond Morgado Recipe from Madeira Island 🧑‍🍳


Almond morgado is a traditional Portuguese sweet made with almonds and sugar, with a crunchy texture and distinctive flavor. With this simple recipe, you can recreate this irresistible classic at home, perfect to accompany a coffee or share on special occasions.


Ingredients


500g sugar

160g water

500g blanched almond flour

1 egg white

300g pumpkin jam

200g egg threads

600g egg custard

1 egg white for brushing




Preparation


Place the sugar and water in a saucepan and heat over medium heat until it reaches the pearl stage (approximately 110ºC).


Add the almond flour and mix well.


Add the egg white and fold in.


Let the dough cool slightly and place on a floured surface.


Knead the dough slightly, wrap it in plastic wrap, and refrigerate for 4 hours or overnight.


Reserve 1/3 of the dough and roll out the rest to obtain a thin layer.


Line the bottom and sides of a 20cm (8-inch) pan (previously greased with butter and dusted with flour).


Place the pumpkin jam on the base, followed by the egg threads, and finish with the egg custard.


With the remaining dough, shape a circle with a diameter slightly larger than the pan and place it on top of the egg custard.


Fold the edges to join well with the top and let it rest for 30 minutes.


Brush with egg white and bake in a preheated oven at 190ºC (375ºF) for 20 minutes or until golden brown.


Let it cool and serve dusted with powdered sugar and decorated with egg threads.
