Recipe for Seafood Feijoada, a Madeira Island-style appetizer 🦐🍤
Ingredients
500g cooked white beans (canned or jarred can be used) 400g shrimp (with or without shell, to taste) 250g clams or cockles 250g mussels (with or without half shell) 1 medium chopped onion 2 chopped garlic cloves 2 chopped ripe tomatoes (or 4 tablespoons of tomato paste) 100ml white wine 1 bay leaf Olive oil to taste Salt, black pepper and chili pepper to taste Chopped fresh cilantro or parsley for garnish

Make the base: In a wide pan, pour a generous drizzle of olive oil. Add the onion, garlic, and bay leaf, and sauté until the onion is translucent. Add the tomato: Add the chopped tomato (or tomato pulp) and cook for about 3 to 5 minutes until slightly broken down. Deglaze: Pour in the white wine and let the alcohol evaporate over medium-high heat for 2 minutes. Cook the seafood: Add the shrimp, clams, and mussels. Season with a pinch of salt, pepper, and chili to taste. Cover the pan and cook for about 5 to 7 minutes, or until the shells open and the shrimp change color. Add the beans: Add the cooked white beans to the pan (along with some of the bean broth for creaminess). Gently stir everything together so as not to break the beans. Adjust the seasonings and let it simmer over low heat for another 5 to 10 minutes so that the flavors blend. To finish: Turn off the heat, remove the bay leaf and sprinkle generously with chopped fresh cilantro or parsley before serving.
