Madeira Island Style Soup Recipe
Ingredients
Olive oil: 2 tablespoons Onion: 1 medium, chopped Garlic: 2 cloves, chopped Carrots: 2 medium, diced Celery: 1 stalk, chopped Zucchini: 1 small, diced Peeled tomatoes: 1 small can (or tomato paste) Cooked red beans: 1 small can Small soup pasta: ½ cup (ditalini, pevide or elbow macaroni) Vegetable broth or water: 1 to 1.2 liters Salt, pepper and aromatic herbs (oregano or basil) to taste Fresh parsley: For garnish
Preparation Method
Make the base: In a large saucepan, heat the olive oil and sauté the onion and garlic until translucent. Add the vegetables: Add the carrot, celery and zucchini. Let it cook for about 5 minutes, stirring constantly. To make the broth: Add the chopped peeled tomatoes and vegetable broth (or hot water). Season with salt, pepper, and herbs. Cover and simmer over low heat for 15 minutes. Add the pasta and beans: Add the pasta and drained red beans. Cook for another 8 to 10 minutes, or until the pasta is al dente. To serve: Adjust the seasonings, turn off the heat, and serve the soup garnished with a sprig of fresh parsley, accompanied by slices of toasted rustic bread.
