Beef Stew with Creamy Mashed Potatoes - Recipe 👨🍳🍷
Ingredients for the Beef Stew
1 kg of stewing beef (chuck, minced shank or ossobuco) 1 large chopped onion 2 cloves of chopped garlic 1 large carrot, diced 2 ripe chopped tomatoes (or 1 can of peeled tomatoes) 1 tablespoon of tomato paste 1 cup of red wine (optional, to add depth to the sauce) 500 ml of hot beef broth (or water) 2 tablespoons of olive oil or vegetable oil Seasonings: Salt, black pepper, 2 bay leaves and a sprig of thyme or rosemary
Ingredients for the Creamy Mashed Potatoes
1 kg of peeled and cubed potatoes 2 tablespoons of butter 1/2 cup of warm milk (or heavy cream for an even smoother texture) Seasonings: Salt, black pepper and a pinch of nutmeg
Method Preparation
1. Beef Stew (In a Pressure Cooker) Searing the meat: Heat the olive oil in the pressure cooker. Season the meat with salt and pepper and sear the pieces in batches until well browned. Remove and set aside. Make the base: In the same pan, add the onion and garlic, scraping the bottom to release the flavor of the meat. Add the carrot and tomatoes, cooking until wilted. [1] Add the liquids: Add the tomato paste and red wine (if using), letting it boil for 2 minutes to evaporate the alcohol. [1] Cook: Return the meat to the pan, add the beef broth, bay leaves, and herbs. [1] Pressure: Cover the pan. Once it reaches pressure, reduce the heat to low and cook for 35 to 40 minutes (the meat should be falling apart). Turn off the heat, let the pressure release, and adjust the salt. If the sauce is too thin, let it simmer uncovered for a few minutes to thicken.
Mashed Potatoes
Cooking: Place the potatoes in a saucepan with water and a tablespoon of salt. Cook until very soft. Mashing: Drain the water and mash the still-hot potatoes until smooth. Finishing: In the same pan over low heat, add the mashed potatoes, butter, and milk (or cream). Stir vigorously until well incorporated and creamy. Adjust the salt and add the nutmeg.
Plating
Arrange a generous layer of the creamy mashed potatoes on the bottom of the plate. Place the soaked meat pieces in the center and, using a ladle (as in the photo), generously pour the thick sauce and vegetable pieces over everything. Serve immediately!
