 Tuna Stew - Traditional dish from Madeira Island 🏝️ Recipe


Tuna stew (or simply tuna stew)


is one of the most traditional and comforting fish dishes from Madeira Island.


Ingredients


1 kg of fresh tuna (cut into pieces for stew) 750 g of potatoes, cut into thick slices 3 large onions, sliced ​​3 ripe tomatoes, chopped (or peeled and seeded) 1 red or green bell pepper, cut into strips (optional, as seen in the photo) 5 cloves of garlic, finely chopped 1 dl of regional wine (dry white wine or dry Madeira wine) 2 bay leaves 1 sprig of fresh parsley 1 sprig of dried oregano 1 chili pepper (or chopped finger chili pepper/bell pepper) Olive oil, water and salt to taste





Preparation Method


The Base: In a wide pan, place a generous amount of olive oil and heat over medium heat. Add the onions and sauté well until translucent and lightly golden. Add the chopped garlic and tomato, cooking for a few more minutes until a smooth sauce forms.


Layering: Add the bay leaves and bell pepper strips. Season with ground pepper and a little salt. Then, arrange the sliced ​​potatoes and pieces of fresh tuna.


The Madeiran Touch: Pour over the regional wine and add a little water (just enough to help cook the potatoes, without completely covering the ingredients). Place the sprig of parsley and the sprig of oregano on top.


Cooking: Cover the pan and cook over low heat for about 15 to 20 minutes. The ideal point is when the potatoes are tender. Tip: Avoid stirring with a spoon so as not to break the potatoes and fish; just shake the pan occasionally.


Remove from the heat and serve piping hot, accompanied by some good homemade bread to soak up the sauce.
