This squid and clam pasta with true seafood flavors is ideal for all seasons. Sprinkle with cilantro and basil when serving.


Ingredients


300 g frozen clams 1 tbsp fresh basil 1 tbsp fresh cilantro 50 g chorizo ​​sausage 350 g striped pasta 1 tbsp salt 1 L water 100 ml white wine ½ packet tomato paste with basil and oregano 1 green bell pepper 500 g frozen squid strips 3 carrots 1 bay leaf 50 g bacon strips 3 tbsp olive oil 120 g leek 3 cloves garlic 1 clove Ingredients: 1 large sweet onion

Preparation:


1. Place the squid strips in a mesh strainer and remove the white membrane while they are still partially frozen.


2. Cut the thicker strips so that they are all the same size and dry them well with paper towels. Sprinkle with bell pepper and set aside.


3. Peel the onion and garlic cloves and chop them finely. Cut the leek into rounds and wash very well.


4. Heat the olive oil in a pan, add the onion, garlic and leek and sauté over medium heat along with the bacon and bay leaf.


5. Meanwhile, peel the carrots and cut them into half-rounds and add them to the pan. Cover and let sweat for about 5 minutes.

Add the cockles and squid strips, and cook uncovered over medium-high heat for another 10 minutes, stirring constantly.

Add the bell pepper, already seeded and cut into pieces, the tomato paste, and the wine, and simmer for another 5 minutes.

Add the water to the pan, stir, and as soon as it boils, season with salt and add the pasta and the chorizo ​​cut into slices. Stir, cover, and cook for about 15 minutes or until the pasta is al dente.

Remove from the heat and add cilantro and basil leaves. Toss to combine.
