Pork Loin in Puff Pastry
Ingredients
1 Pork loin
1 Package of rectangular puff pastry (Ideally, use homemade puff pastry)
2 or 3 onions
10 to 15 slices of bacon
Grated mozzarella cheese to taste
Balsamic vinegar to taste
Olive oil
Aromatic herbs of your choice
Salt
Pepper
Preparation
We start by seasoning the loin with salt, pepper, and aromatic herbs.
We heat a little olive oil in a frying pan and sear the loin on all sides.
Attention! The idea is not to cook the loin, just to brown it on the outside.
When it is golden brown, we set it aside.
Meanwhile, we cut the onions into half-moons, heat a little more olive oil in a frying pan, and add the onions.
We let them caramelize without burning.
We season with salt and add a little balsamic vinegar to help the process.
It's normal for this phase to take a while, don't worry, that's how it is ;)... Cooking requires patience…
When the onion is ready, we set it aside.
We stretch the dough on the counter and place the bacon slices on top.
We spread the caramelized onion over the bacon and cover with grated cheese.
We place the pork loin on top and close everything with the help of the bacon slices.
Then we close the puff pastry and place it on a baking sheet lined with parchment paper.
If you want, you can decorate the pastry to make it prettier... As they say, we eat with our eyes too ;)
We brush with a little beaten egg and bake in a preheated oven at 200º (it will depend on the oven).
We let it cook until the internal temperature of the meat reaches 71º.
Remember that the temperature continues to rise even after removing it from the oven, give it some leeway…
It is very important that they have the A meat thermometer is essential; without it, you'll be at a "lottery" because cooking times and temperatures vary greatly from oven to oven.
When you remove it from the oven, don't open it immediately; let it rest for about 10 minutes.
