 Bean Pastries - Recipe


These bean pastries combine a thin, crispy dough with a sweet filling of white beans, almonds, and egg yolks. A traditional dessert, perfect for serving on festive days or as a snack.


Ingredients


1.5 dl water

1 tsp salt

1 tbsp olive oil

20 g unsalted butter

250 g wheat flour

100 g almond kernels

100 g cooked white beans

400 g sugar

1 dl water

10 large egg yolks

1 tbsp powdered sugar

1 tbsp olive oil




Preparation


1. Bring the water, salt, oil, and butter to a boil.


2. Once boiling, add the flour, stirring quickly with a wooden spoon until a smooth dough forms.

Place the dough on a work surface dusted with a tablespoon of flour and work it with your hands until it becomes "elastic". Form a ball, cover with a cloth dampened in warm water and let it rest.

Chop the almond kernels in a food processor and mix with the beans, previously passed through a food mill or pureed with an immersion blender. Set aside.

Place the sugar and water in a saucepan and bring to a low boil. Let it boil for approximately 3 minutes, remove from heat and pour the liquid over the bean puree and almonds.

Mix well, add the egg yolks, previously beaten, and return to the heat until it boils, taking care to stir constantly. Preheat the oven to 160 ºC.

Roll out the dough until very thin and line the inside of the molds, previously greased with olive oil.

Next, divide the mixture among the inside of each pastry and bake for 30 minutes.


9. Check the doneness occasionally to ensure the surface doesn't brown.


10. Once cooled, dust with powdered sugar.
