Grilled Cod with Herb and Lime Sauce Recipe
Grilled cod with herb and lime sauce is a light and refreshing summer dish. The cod fillets are grilled for about 10 minutes on a griddle, served with a chive, basil and lime sauce, and accompanied by a fresh salad of watermelon, celery, lettuce and pumpkin seeds. Simple and full of freshness.
Ingredients
• 1 package of Cod Fillets
• Olive oil and lime to taste
• Salt and black pepper to taste
• Chives and basil to taste
• 1 small watermelon
• 2 celery stalks
• 8 large lettuce leaves
• 1/2 red onion
• 8 tbsp. 1 tablespoon of pumpkin seeds
Preparation
Grilling the cod: Thaw the cod fillets, rinse under cold running water, pat dry with paper towels, and generously coat with olive oil. Heat a grill pan or griddle well and grill the cod fillets for 10 minutes (depending on the thickness of the fillets), turning halfway through.
Prepare the sauce: Mix well 8 sprigs of chopped chives and 6 large chopped basil leaves, 6 tablespoons of olive oil, the juice of 1 lime, salt, and freshly ground black pepper.
Assemble the salad: In a salad bowl, combine the diced watermelon, sliced celery, julienned lettuce, chopped red onion, and pumpkin seeds previously toasted in a non-stick pan without oil. Season the salad with olive oil, lime juice, and salt.
Serving suggestion: Serve the cod fillets with the sauce and salad, all sprinkled with lime zest.
