Ingredients

25 g cocoa powder

1 tsp powdered sugar

125 g currants

125 g raspberries

125 g blueberries

1 tbsp red fruit jam

1/5 dl water

1 tbsp butter (for greasing the pan)

150 g butter

1/2 tsp salt

25 g fresh baker's yeast

80 g sugar

4 large eggs

2 dl fresh cream

1.5 dl white rum

250 g cooking chocolate

1 tbsp 1 tablespoon flour (for the mold)

300 g flour

½ dl semi-skimmed milk

Preparation

Dissolve the yeast in the previously lukewarm milk.

Add 100 g of flour, knead well, cover with a cloth and let it rise until it doubles in volume.

Break the chocolate into pieces and place them in a bowl along with half of the rum.

Bring the cream to a boil, remove from heat and pour it over the chocolate and rum.

Stir well until you obtain a cream and let it cool. When the mixture is completely cold, beat in a mixer until you obtain a light cream. Set the ganache aside.

Add the remaining flour to the risen dough, the eggs, 50 g of sugar, the cocoa, the salt and the softened butter, and knead until you obtain a smooth and elastic dough.

Preheat the oven to 180°C. Pour the batter into a bundt pan, previously greased with butter and dusted with flour, and let it rise until it fills 3/4 of the pan. Bake for about 30 minutes.

Let it cool slightly, unmold, and let it cool completely. Cut the Savarin cake into three horizontal slices.

Bring the water and the remaining sugar to a boil, let it boil for one minute, and remove from heat. Add the remaining rum and drizzle the cake slices with this syrup. Then, spread each slice with the ganache and stack them, reshaping the cake.
