Colorful shrimp salad recipe 👨🍳
Ingredients
1/2 zucchini, cut into pieces
100g pumpkin, cubed
150g sliced mushrooms
1 cup spinach
30g scallions or leeks, sliced
200g cooked shrimp meat
Salt, pepper, and chopped parsley
Preparation
In a frying pan, sauté the mushrooms with the zucchini and pumpkin for about 7 minutes. Add the scallions and sauté for another 2 minutes. Alternatively, you can microwave the vegetables in a Cozibag for about 4 to 5 minutes.
Divide the spinach into two bowls. Arrange the vegetables on top and season with a little salt and pepper, if necessary.
Add the shrimp and season with chopped parsley.
