Caldo Verde Recipe 👨‍🍳🍷


Caldo verde is the most famous soup in Portugal, originating from the Minho region. It contains only potatoes, onions, garlic, olive oil, sausage, and finely julienned kale. It is traditionally served piping hot in earthenware bowls, accompanied by slices of cornbread.


Ingredients (4 to 6 servings)


500 g potatoes, 200 g to 250 g finely julienned kale, 1 medium onion, 2 to 3 cloves of garlic, 1 chorizo ​​sausage (or salpicão), 4 tablespoons of olive oil (plus a drizzle for serving), Salt to taste, 1.5 liters of water





Preparation


Cook the base: Peel the potatoes, onion, and garlic. Place everything in a pot with the water, olive oil, whole chorizo ​​sausage, and season with salt. Cook over medium heat until the potatoes are well cooked and soft. Prepare the broth: Remove the chorizo ​​from the pot and set it aside. Using a blender, puree the potato, onion, and garlic mixture into a smooth, velvety purée. Add the kale: Return the pot to the heat. When the broth begins to boil, add the finely chopped kale and cook for about 10 minutes with the pot uncovered. Tip: Do not cover the pot to keep the kale a vibrant green color. Finish: Slice the reserved chorizo. You can add the chorizo ​​slices directly to the broth in the last few minutes of boiling or add them to each serving when serving. Adjust the salt if necessary and finish with a drizzle of extra virgin olive oil.
