Portuguese-Style Pasta 👨🍳🍷
Ingredients

Spaghetti
Farinheira (Portuguese sausage)
Chouriço (Portuguese sausage)
Chouriço de corte (sliced sausage, moira or morcela type)
Beef for steaks or stewing
Carrots
Onion
Tomato paste
White wine
Island cheese
Parsley
Olive oil
Salt
Preparation
Let's start by preparing and cutting all the ingredients.
Heat a little olive oil in a shallow pan.
Sear the meat, already seasoned and cleaned of all skin and tendons.
When the meat is well browned, set aside.
Add a little more olive oil to the same pan.
Add the chorizo, onion, and carrot.
Sauté until the flavors are well integrated.
Add a little tomato paste. Tomato sauce and mix well.
Refresh with white wine and scrape the bottom of the pan with a wooden spoon to loosen any lingering flavor.
When the wine has almost completely evaporated, add the water.
Be careful not to add too much or too little water. It needs to be enough to cook the pasta, but not too much to dilute the flavor.
Adjust the seasoning and when the water starts to boil, add the pasta.
Place the farinheira (Portuguese sausage) and blood sausage on top so that the flavor infuses the broth, and start cooking the pasta. This will depend on the brand (in my case, 9 minutes).
After that time, remove the sausages and slice them.
Add the previously reserved meat and mix well.
Serve with a little grated island cheese, chopped parsley, and the sausages cut into slices.
