Pineapple Cake
Pineapple cake is a delicious and easy-to-prepare dessert that combines the sweetness of pineapple with the soft texture of cake. Ingredients
50g butter
50g brown sugar
7 slices of pineapple (syrup)
100g softened butter
100g sugar
100g self-raising flour
5g baking powder
5g vanilla extract
2 eggs
200ml heavy cream
20g powdered sugar
Preparation of Pineapple Cake
Preheat oven to 180ΒΊC (350ΒΊF).
For the frosting, beat 50g softened butter and 50g brown sugar until a smooth paste forms.
Spread this paste over the base and a quarter of the height of the sides of a 20 cm diameter round pan. Arrange 7 pineapple slices on top, reserving the syrup for later.
Place 100g softened butter, 100g sugar, 100g self-raising flour, 1 teaspoon baking powder, 1 teaspoon vanilla extract and 2 eggs in a bowl along with 2 tablespoons of the reserved pineapple syrup, beat in a mixer until you obtain a smooth and creamy consistency.
Place the mixture in the pan on top of the pineapple and smooth it out. Bake for 35 minutes.
Meanwhile, beat the cream with the sugar until it forms whipped cream.
After baking, let the cake rest for 5 minutes and unmold onto a plate. Serve warm with a dollop of whipped cream.
