Steak with Fried Egg Recipe
Ingredients
(for 1 person)
Beef steak:
1 unit (rump, sirloin or tenderloin) Egg: 1 unit Potatoes: 2 medium (for frying) Garlic: 2 cloves (crushed with skin) Bay leaf: 1 leaf Lard or Butter: 1 tablespoon Olive oil: 1 tablespoon White wine: 2 tablespoons (optional, for the sauce) Salt and black pepper: to taste
Preparation Method
The Fried Potatoes
Peel and cut: Cut the potatoes into thin sticks. Wash and dry: Wash them in cold water to remove the starch and dry them very well with a cloth. Fry: Fry in very hot oil until golden and crispy. Drain on absorbent paper and season with salt.
The Steak
Seasoning:
Season the steak with salt and freshly ground black pepper. Hot skillet: Heat the lard (or butter) and olive oil in a skillet with the crushed garlic cloves and bay leaf. Frying: Place the steak in the skillet and sear it over high heat for about 1 to 2 minutes per side (adjust the time to your liking for the doneness of the meat). Remove the steak and set aside. Making the sauce: In the same skillet, pour in the white wine to deglaze the meat juices. Let it boil for 30 seconds to evaporate the alcohol.
The Fried Egg
Frying:
In another small skillet with a drizzle of olive oil or butter, fry the egg over medium-low heat so that the white cooks and the yolk remains runny, exactly as in the photo.
Plating:
Place a bed of french fries at the bottom of the plate. Arrange the steak on top of the potatoes. Drizzle the meat with the pan sauce, including the garlic and bay leaf. Finish the dish by placing the fried egg directly on top of the steak.
