Kiwi Cake
Ready in just 30 minutes, this kiwi cake is moist, fluffy, and surprisingly easy to make. Try this kiwi recipe, ideal for a snack or brunch.
Ingredients
5 kiwis (300g each)
100g all-purpose flour
100g almond flour
2 tsp baking powder
1 tsp salt
100g butter
170g sugar
3 medium eggs
60ml cream
1 tbsp powdered sugar
Preparation
Preheat the oven to 180°C (350°F). Line a loaf tin with parchment paper, leaving a small margin on the sides.
Peel the kiwis and puree four of them, slicing the rest. Set aside.
In a bowl, mix the flours with the baking powder and salt.
In another bowl, beat the melted butter with the sugar until creamy. Add the eggs, one at a time, beating well after each addition. Continue beating until the mixture is fluffy.
Gradually add the flour mixture, alternating with the cream, until a smooth batter forms.
Carefully fold the kiwi puree into the batter. Transfer the batter to the prepared pan.
Bake for about 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove from the oven and let cool slightly before unmolding. Decorate with the kiwi slices.
