Fish Soup


Fish soup is full of flavor, simple to prepare, and super versatile, perfect for both a special lunch and a light weeknight dinner.


Ingredients


3 hake fillets

3 redfish fillets

1 onion and half a whole onion

4 medium potatoes

1 large carrot

2 dl olive oil

1 bay leaf

1 sprig of parsley

2 cloves of garlic

Salt and pepper to taste





Preparation


In a pot, place the fish, the whole half onion, the whole garlic cloves, the bay leaf, the chopped parsley, season with salt and pepper, pour in half the olive oil, cover with water and bring to a boil.


In the same pot, put the potatoes, carrot, and onion cut into pieces. Pour in the olive oil, season with salt, cover with water and bring to a boil.


Meanwhile, remove the fish from the pot to a container, let it cool, and shred it, removing all the skin and bones. Strain the water in which you cooked the fish and reserve it.


Once the potatoes are cooked, mash them well and gradually add the water in which you cooked the fish until you have a creamy consistency. Add the fish, adjust the seasoning, and let it simmer for a while. You can add cilantro to taste.
