Carrot Cake with Chocolate Frosting
Ingredients
Cake:
3 medium carrots
4 eggs
1/2 cup of oil
2 cups of sugar
2 cups of all-purpose flour
1 tablespoon of baking powder
Frosting:
1 cup of milk
5 tablespoons of sugar
5 tablespoons of cocoa powder
1 tablespoon of butter
1 teaspoon of cornstarch
Preparation
Cake:
Peel and chop the carrots.
Place everything in a blender: the carrots and the remaining cake ingredients.
Blend well until a smooth batter forms.
Pour into a greased pan (I used a baking sheet, but a bundt pan can also be used).
Bake in a preheated oven at 180°C (350°F) for about 45 minutes or until golden brown - depending on the oven (Tip: insert a fork or toothpick into the cake; if it comes out clean, it's ready!)
Frosting:
Dissolve the cornstarch in half of the milk to prevent lumps.
Pour into a saucepan with the remaining ingredients for the topping.
Cook over low heat for about 10 minutes or until it reaches your desired consistency (I like it thicker).
Cover the cake and serve!
Tip: If you use a baking pan, poke the cake several times with a fork before adding the topping so that it soaks into the cake! It's delicious!
