TTurkey Breast Stuffed with Spinach
Turkey breast stuffed with spinach and apple, a different recipe for a special occasion. With a touch of citrus and the nutrients of spinach, it's a flavorful option that will be a hit at the table. Ingredients 1.3kg turkey breast 2 units (300 g) orange juice and zest 1 unit (100 g) lemon juice and zest 2 tbsp salt 1 tbsp pepper 1 tbsp fresh thyme 1 unit (120 g) apple 1 tbsp butter 2 packages (340 g) spinach leaves 50ml cream 1 tbsp garlic powder 2 tbsp cranberries 50 g walnut kernels 200 g bacon 2 tbsp 1 tablespoon Extra virgin olive oilPreparation Season the turkey breast with the juice and zest of the oranges, the juice and zest of the lemon, half the salt, pepper, and thyme. Cover and marinate for at least 30 minutes or, ideally, overnight in the refrigerator. Cut the apple into small cubes. Melt the butter in a frying pan over medium heat, add the apple, and cook for about 3 minutes. Add the spinach and cook until softened. Add the cream and season with garlic powder, the remaining salt, and pepper to taste. Add the cranberries and chopped walnuts and mix. Open the turkey breast so that you can roll it evenly. If necessary, pound the meat with a meat mallet to even out the thickness. Place the stuffing on one side of the turkey breast and roll carefully. Cover with the bacon slices and wrap in cling film. Refrigerate for 2 hours. Preheat oven to 190°C (375°F). Remove from the refrigerator, drizzle with olive oil, and bake for 45 minutes to an hour, basting as needed with the meat juices.
