Tomato Pesto
Tomato pesto with dried fruit, fresh herbs, and Parmesan cheese. Creamy and aromatic, ideal for pasta, toast, or as a healthy dip.
Ingredients
70g mixed dried fruit
1 clove garlic
70ml extra virgin olive oil
½ bunch fresh basil
½ bunch fresh mint
400g cherry tomatoes
1 tsp salt
to taste pepper
Preparation
Place the dried fruit, garlic, cheese, and olive oil in a food processor and blend until you obtain a sandy mixture.
Add the fresh herbs, tomatoes, and season with salt and pepper to taste. Blend again until you reach the desired consistency.
Serve with bread or pasta.
