Spanish-Style Cod
Spanish-style cod is a dish full of color and flavor, where cod is combined with bell peppers, tomatoes, and olive oil, creating a simple, aromatic, and irresistible recipe.
Ingredients
2 onions, sliced
4 cloves of garlic, crushed
500g potatoes, sliced
2 cod fillets, soaked and cut into pieces
350g tomatoes, sliced
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1 chili pepper, sliced
1 tsp salt
Pepper to taste
2 tbsp olive oil
2 bay leaves
1 sprig of parsley
Water as needed
Paprika powder as needed

Preparation
In a pan, layer the ingredients in the following order: onion, garlic, potato, cod pieces, tomato, green and red bell peppers, chili pepper. Once the layers are complete, season with salt and pepper, drizzle with olive oil, add the bay leaves, parsley, and a little water.
Cover and cook for at least 40 minutes without stirring. It will be ready when the potatoes are cooked.
Serve immediately and garnish with paprika powder.
