Seafood Paella Recipe


Ingredients


1/2 cup olive oil

1 Spanish onion, chopped

2 cloves garlic, minced

2 tomatoes, peeled and chopped

1/4 lb squid, cleaned and cut into rings

1 lb prawns or large shrimp

1 lb mussels, cleaned

2 cups Spanish short-grain rice (Bomba or Calasparra)

4 cups seafood broth or hot water with saffron

1 red bell pepper, sliced ​​into strips

To taste: Salt, paprika, and fresh parsley





Preparation


Sauté the Base: Heat olive oil in a large paella pan. Add the onion and garlic, sautéing until soft. Mix in the tomatoes and cook until they break down into a sauce.


Add Seafood: Stir in the squid rings and cook for a few minutes. Add the prawns and cook until they just turn pink, then remove and set them aside for later. Simmer with Rice: Pour in the rice and stir to coat it with the oil and juices. Add the hot seafood broth (infused with saffron) and paprika. Spread the rice evenly across the pan. Do not stir the rice again once it starts simmering.

Final Cooking: Arrange the mussels and the reserved prawns on top of the rice. Decorate with red pepper strips.

Resting: Let it simmer until the liquid is absorbed and the rice is tender (about 15-20 minutes). A thin crust (socarrat) should form on the bottom. Remove from heat, cover with a towel, and let it rest for 5 minutes before serving. Sprinkle with fresh parsley.
