Pan-Seared Steak Recipe with Fries and Green Puree 👨‍🍳🍷


Ingredients


Steak: 1 thick-cut beef steak (fillet, ribeye, or sirloin), room temperature. Cookpad

Fries: Frozen or hand-cut potatoes, deep-fried until golden. Food and meat coop

Green Puree (Esparregado style): 250g fresh spinach or broccoli, 2 cloves of garlic, olive oil, and optionally a splash of cream or a dash of flour to thicken. Continent

Instructions


Prepare the Green Puree


Blanch the spinach or broccoli in boiling salted water for 5–10 minutes. tudoreceitas.com

Sauté minced garlic in olive oil until golden. Add the drained greens and sauté for a few minutes.

Blend until smooth using a hand blender. For a creamier texture, stir in a spoonful of cream or butter.


Cook the Steak


Season the steak generously with salt and pepper on both sides.

Heat a pan with oil over high heat until smoking.

Sear the steak for about 1 minute on high heat to develop a crust. Cookpad

Flip and lower the heat. Cook for another 1.5–2 minutes per side for medium-rare. Add a knob of butter and aromatics (like garlic) to the pan during the last minute to baste the meat. Cookpad

Let the steak rest for 5 minutes before serving.


Prepare the Fries


Deep-fry the potatoes at 180°C (350°F) until they are crispy and golden brown. Drain on paper towels and salt immediately.


 Serving


Place the rested steak in the center of the plate. Arrange the fries on one side and a generous portion of the green puree on the other. Garnish with a fresh cherry tomato or a small side salad.
