Julienne Soup
Light, nutritious, and full of flavor, Julienne soup is perfect for a comforting meal.
Ingredients
1 sliced onion
2 sliced garlic cloves
2 carrots, chopped
2 potatoes, chopped
1 turnip, chopped
1 tsp salt
1 carrot, julienned
300g Savoy cabbage, julienned
Preparation
Peel the onion and garlic cloves and chop them into pieces in a saucepan.
Peel the carrots, potatoes, and turnip and wash them under running water. Cut them into pieces and add them to the onion.
Add water, season with salt, and bring to a boil. Cook until the vegetables are tender.
Puree with an immersion blender. Meanwhile, wash the julienned cabbage and carrot very well and drain thoroughly. Add to the soup and cook for another 15 minutes.
Serve the Julienne soup and garnish with a drizzle of olive oil.
