Microwave Coconut Pudding (8 minutes)
Ingredients
Caramel:
70g sugar, a little water
Pudding:
200ml sweetened condensed milk, 200ml coconut milk, 4 eggs, 50g grated coconut
Preparation
Caramel: In a saucepan, combine the sugar and a little water. Cook over medium heat until it forms a caramel. Immediately pour into a microwave-safe pudding mold.
Pudding: In a bowl, mix the coconut milk, sweetened condensed milk, eggs, and grated coconut.
Pour over the caramel in the mold.
Microwave for 8 minutes on high power. Check for doneness with a wooden skewer. If it comes out clean, it's ready. Otherwise, continue cooking.
Remove and let cool completely before unmolding. It's ready!
