Ingredients

Sausages: 4 units (can be regular sausage, hot dog sausage, or thin sausage type)

Eggs: 4 units

Tomatoes: 2 medium (ripe, firm)

Bread: 4 slices (white bread, whole wheat, or your preference)

Butter or olive oil: to taste (for frying/grilling and spreading on the bread)

Salt and pepper: to taste

Optional: a little milk or cream to make the eggs creamier, herbs like oregano or basil for the tomatoes.


Preparation Method


(step-by-step, all in about 20-25 minutes):


Prepare the sausages:


Heat a large skillet (or use two) over medium heat with a drizzle of olive oil or butter.


Make shallow diagonal cuts in the sausages (to prevent them from bursting and to brown better).

Place the sausages in the skillet and fry/grill for 8-10 minutes, turning occasionally until browned on all sides. Set aside and keep warm.





Grilled Tomatoes:


Wash the tomatoes and cut them in half (widthwise).

In the same skillet as the sausages (take advantage of the flavor), add a drizzle of olive oil if necessary.

Place the tomatoes cut-side down. Season with salt, pepper, and oregano.


Grill for 3-4 minutes per side until soft and golden brown (don't stir too much to avoid breaking them). Keep warm.


Scrambled Eggs:


In a bowl, beat the 4 eggs with a pinch of salt, pepper, and, if you want them creamier, 2 tablespoons of milk or cream.


In a skillet (clean or the same one if there's space), melt a little butter over medium-low heat.


Pour in the eggs and gently stir with a spatula, scraping the bottom, until cooked but still creamy (don't overstir or it will dry out). This takes about 3-5 minutes.


Toasted bread:


While the other items are cooking, toast the bread slices in a toaster or skillet (with a little butter to make them crispy and golden).


Spread hot butter on the toast to melt it.


Assembly and tips:


Place everything on a large plate: the sausages, the grilled tomatoes, a generous portion of scrambled eggs, and the toast alongside.


Serve immediately, piping hot! Goes well with tea, coffee, or orange juice.


Variations:


Add fried bacon if you want to make it more complete, or baked beans in tomato sauce (classic English).
