 Lemon Posset, the delicious British cream made with lemon, heavy cream, and sugar.


Ingredients:


300g heavy cream

80g sugar

3 Sicilian lemons

Fresh mint leaves for garnish (optional)




Preparation:


Prepare the lemon zest:

First, grate the zest of one of the lemons and set aside.


Cut the lemons in half to make 6 halves. Carefully use a small spoon to remove the pulp without breaking the peels. Set them aside.


Chop the lemon pulp and strain it to extract as much juice as possible. Set it aside.


Prepare the lemon cream:

In a bowl, mix the sugar with the lemon zest.


In a saucepan over medium heat, heat the heavy cream, stirring constantly to prevent sticking. When it starts to boil, add the sugar and zest mixture and continue stirring for about 5 minutes.

Remove the pan from the heat and add the lemon juice. Let it rest for a few minutes so that the mixture cools down a bit.

Assembling the Lemon Posset:

Carefully fill the lemon peels with the cream, avoiding filling them to the brim to prevent spillage.

Refrigerate for at least 3 to 4 hours or until the dessert is firm.

Before serving, garnish with a few fresh mint leaves for a special and elegant touch. Enjoy!
