Juicy Grilled Ribs with Homemade Tomato Sauce That Will Make You Cry with Emotion


(Ready in 30 minutes!)


Ingredients – Meat


1.2 kg pork ribs (in strips or large pieces, as you prefer)

3 cloves of garlic, minced or crushed

2 tbsp bell pepper pasta (sweet or spicy, according to your taste)

1 tsp annatto powder (sweet paprika)

1 tsp smoked paprika (optional, but tastes amazing)

1 tsp coarse salt

Freshly ground black pepper

Juice of ½ lemon

3 tbsp olive oil

2 bay leaves


Ingredients





Explosive Tomato Sauce 6 very ripe tomatoes (or 1 can of 800g of good quality peeled tomatoes)

1 large chopped onion

3 cloves of garlic

1 small red bell pepper (optional, adds sweetness)

1 tbsp Sugar tea (cuts the acidity)

1 tsp dried oregano

1 pinch of cayenne pepper or chili pepper (if you like it spicy)

50 ml white wine

Salt and pepper to taste

Olive oil as needed

Chopped basil or parsley leaves at the end


Step-by-step (super simple)


Seasoning the meat (can be done the day before)


In a large bowl, mix the garlic, paprika paste, paprika, smoked paprika, salt, pepper, lemon juice, olive oil, and broken bay leaves. Rub the ribs well with this paste, cover, and leave for at least 1 hour in the refrigerator (the longer, the more flavor!).


Making the tomato sauce (while the meat marinates)


In a pan, sauté the onion and garlic in olive oil until translucent. Add the diced red bell pepper. Add the tomatoes (if fresh, grate them or cut them into pieces). Combine the white wine, sugar, oregano, and a pinch of chili. Simmer over low heat for 15-20 minutes, stirring occasionally, until thickened. Finally, blend with an immersion blender (or leave chunks if you prefer a rustic texture). Taste and adjust salt/pepper. Set aside.


Grilling the Ribs


Heat the grill/griddle/plancha very well (the hotter, the better the crust!). Drain some of the excess liquid marinade from the meat and place it on the grill. Cook for 4-5 minutes per side (depending on thickness) until golden brown and with those beautiful stripes. Don't stir too much to avoid losing the juices!


Combining everything and letting the magic happen


As soon as you remove the meat from the grill, place it directly in the pan with the hot sauce. Mix well, simmer for 2-3 minutes over low heat so the flavors meld and the meat becomes even more tender.


Serving suggestion:


Sprinkle with fresh basil or parsley, serve with French fries, fluffy white rice, black-eyed peas, or simply bread to soak up the sauce.
