 Coconut pudding recipe that makes any New Year's table look like it's straight out of a magazine.


Ingredients


For the flan:


1 liter of milk

150g cornstarch

120g sugar

200ml coconut milk

80g grated coconut




Plum sauce:


400ml water

120g sugar

150g dried plums (pitted)


Preparation


Without heating, in a saucepan, place half of the milk and all the cornstarch. Mix until dissolved. Pour in the other half of the milk. Stir. Then add the sugar, coconut milk, and grated coconut.


Cook over medium heat and stir the mixture with a whisk until thickened, but not too much (about 20 minutes). Remove from heat and pour into a greased mold (we used coconut oil). Let it cool/chill and refrigerate for 2 hours.

Plum sauce: In a saucepan, combine the water, sugar, and plums. Cook over medium heat, stirring occasionally, for about 15 minutes (until the sauce takes on the color of the plums). Remove all the plums and set them aside. Continue cooking the sauce over medium heat, stirring occasionally, until it reaches the desired consistency (about 15 to 20 minutes).


Unmold the pudding. Decorate as desired. Place the plums in the center with some of the sauce. Serve the rest in individual portions.
