 Pure Sin: Fried Mushrooms with Cream that Melt in Your Mouth and Will Make You Addictive Forever


Ingredients


(Serves 2-4, depending on appetite):


600g fresh mushrooms (mixture of button, shiitake or portobello for more flavor)

250ml heavy cream (fresh or heavy cream, very rich!)

3 cloves of garlic, crushed or finely chopped

1 medium finely chopped onion (or shallot for luxury)

3 tablespoons of butter (don't skimp, this is the secret!)

100ml dry white wine (or Port for a top-quality Portuguese version)

Salt, black pepper, freshly grated nutmeg

A splash of soy sauce or Worcestershire sauce for a bombastic umami effect

Grated Parmesan or Gruyère cheese (optional, but transforms it into a masterpiece)

Fresh herbs: parsley, chives or thyme to finish


Method Easy-to-prepare:





Clean and slice: Rinse the mushrooms quickly in water or with a clean, damp cloth. Slice them thickly or quarter them – the larger they are, the juicier they will be!


Divine sauté:


In a large, hot skillet, melt the butter with a drizzle of olive oil. Add the onion and garlic, sauté for 2 minutes until fragrant (don't let it burn, otherwise it will become bitter!).


Brown the mushrooms:


Add all the mushrooms at once! High heat, stir little at first to brown them well. They will release water – let it evaporate for about 6-8 minutes until caramelized and reduced by half. Season with salt, pepper and nutmeg now (it will absorb everything!).


Maximum creaminess:


Pour in the white wine, scrape the bottom of the skillet (fond is life!). Let it reduce for 2 minutes. Lower the heat, add the cream and stir gently. Cook for 4-6 minutes until the sauce thickens and envelops everything like a hug. Taste and adjust: a dash of soy sauce gives it that addictive touch!


Epic finish:


Turn off the heat, add grated cheese to melt slightly. Sprinkle fresh herbs on top. Serve HOT with toast, Alentejo bread, bifanas (pork sandwiches), or even straight from the spoon!


Tips


Vegan? Coconut or oat cream + vegetable butter = approved!


Want it spicy? Add chili pepper or smoked paprika.


Accompany with a glass of chilled Vinho Verde – it's Portugal on a plate!
