 "MONSTER Stuffed Potato: Explodes with Flavor with Pickles, Melted Cheese, Caramelized Onion, and Garlic!"


Quick and killer recipe (4 large potatoes)


Ingredients


4 large Asterix or Baroa potatoes (to open like canoes)

200g grated mozzarella or Prato cheese (or a mix with cheddar)

1 cup finely chopped cucumber pickles

1 large onion, thinly sliced

4 cloves of garlic, chopped or crushed

100g cream cheese or requeijão (Brazilian cream cheese)

3 tablespoons butter

1/2 cup milk or heavy cream

Salt, black pepper, and oregano to taste

Chopped fried bacon or calabrese sausage (optional, but it's insane)





Instructions


Wash the potatoes, prick them with a fork, and bake directly on the oven rack at 200°C for 50–60 minutes (or until tender inside).


Meanwhile, sauté the onion in olive oil or butter until golden brown and caramelized. At the end, add the garlic and stir for 30 seconds.

While the potatoes are still hot, cut them in half lengthwise, carefully remove the pulp, leaving a 1 cm border.

Mash the pulp with butter, cream cheese, milk, salt, pepper, and half of the cheese. Mix well until creamy.

Add the chopped pickles, the sautéed onion and garlic, and (if desired) bacon/sausage. Mix.

Filler the potatoes generously, cover with the remaining grated cheese, and bake (or air fryer) at 220°C for 10–15 minutes until golden brown and the cheese is bubbling.

Finish with more pickles on top, chives or sour cream, and… devour!
