Magic Green Cake: The Secret to the Natural Color That Will Enchant Everyone!
Ingredients
:For the cake: 3 eggs
1 cup of sugar
1/2 cup of vegetable oil
1 cup of fresh, washed spinach (yes, it's the secret to the green color! Or use kale for a softer shade)
1 cup of milk (can be plant-based for a vegan version)
2 cups of all-purpose flour
1 tablespoon of baking powder
Pinch of salt
For the frosting:
200g of melted white chocolate
1/2 cup of heavy cream
Mint leaves or lemon zest for decoration
Preparation:
Preheat the oven to 180°C (350°F) and grease a 22cm (9-inch) round cake pan with butter and flour.
Beat the magic green batter:
: In a blender, combine the eggs, sugar, oil, spinach (or kale), and milk. Blend until smooth and homogeneous (about 2 minutes). Don't be alarmed by the color – it's pure nature!
Mix the dry ingredients:
In a large bowl, sift together the flour, baking powder, and salt. Pour the green cream from the blender over the mixture and gently stir with a spatula until everything is incorporated. Don't overmix, or you'll lose the fluffiness!
Bake with love:
Pour into the pan and bake for 30-35 minutes. Do the toothpick test: if it comes out clean, it's ready! Let it cool in the pan for 10 minutes before unmolding.
Creamy topping:
Melt the white chocolate in a double boiler or microwave (in 30-second intervals, stirring). Mix in the warm heavy cream.
Tips:
Want a more intense green? Add 1 teaspoon of matcha powder to the batter.
Fitness version:
Replace half the flour with oats and use sweetener.
Serve with tea or coffee – it's an explosion of flavors!
