Homemade Dream Cake: Strawberries and Wild Berries Bursting with Flavor!


Ingredients


(for the dough)


: 3 eggs (at room temperature)

1 cup (tea) of sugar

1/2 cup (tea) of vegetable oil

1 cup (tea) of warm milk

2 cups (tea) of wheat flour

1 tablespoon of baking powder

Pinch of salt

1 teaspoon of vanilla essence (optional, but it adds a touch!)


Ingredients


(for the filling and topping):


300g of fresh strawberries (washed and chopped)

200g of mixed red berries (blueberries, raspberries, blackberries – fresh or frozen)

1 can of condensed milk

1 box of heavy cream (200g)

2 tablespoons of sugar (to macerate the fruit)

Juice of 1 lemon (to enhance the acidic flavor)





Prepare the magic fruits


: In a bowl, mix the chopped strawberries and berries with the sugar and lemon juice. Let it macerate for 15-20 minutes in the refrigerator. They will release a delicious juice!


Prepare the fluffy batter:


In a blender or mixer, beat the eggs, sugar, oil, milk, and vanilla for 3-4 minutes until creamy. In another bowl, sift the flour with the salt and baking powder. Gradually add to the liquid mixture, stirring gently with a spatula (don't overmix to avoid deflating!).


Assemble the cake:


Grease a round pan with a hole in the middle (or without, you choose!) with butter and flour. Pour half of the batter. Spread half of the macerated fruit on top. Cover with the remaining batter and finish with the remaining fruit (press lightly to sink it in a little).


Oven timer!


Preheat oven to 180°C (350°F). Bake for 35-45 minutes (do the toothpick test: if it comes out clean, it's ready!). Let it cool for 10 minutes in the pan before unmolding.


Creamy Frosting


: Mix the sweetened condensed milk with the heavy cream until smooth. Spread over the cooled cake. Decorate with extra fresh fruit for an Instagram-worthy look!


Tips


If using frozen fruit, thaw it beforehand to avoid making the cake too soggy.


Want more creaminess? Add whipped cream to the frosting.


Store in the refrigerator for up to 3 days (if there's any left!).
