Hey friend! Nothing beats a warm cornbread, fluffy inside and crispy outside, right? This recipe is super easy, quick, and uses ingredients you probably already have at home. It yields about 10 servings and is ready in less than 1 hour. Perfect for breakfast or an afternoon snack. Let's go!


Ingredients:


2 cups of cornmeal (or fine cornmeal)

1 cup of wheat flour

1 cup of sugar (you can reduce it to 3/4 if you prefer it less sweet)

1 cup of milk (can be plant-based for a vegan version)

1/2 cup of vegetable oil (or melted butter)

3 eggs (or vegan substitute: 3 tablespoons of hydrated flaxseed)

1 tablespoon of baking powder

1 pinch of salt

Optional: 1/2 cup of grated cheese or grated coconut for a special touch!


Preparation Method:





Preheat the oven:


Turn it on to 180°C (350°F) and grease a rectangular baking pan (approximately 20x30 cm) with oil and cornmeal (to prevent sticking and make it crispier).


Mix the dry ingredients:


In a large bowl, sift together the cornmeal, wheat flour, sugar, baking powder, and salt. Mix well to incorporate air.


Add the liquid ingredients:


In another bowl, beat the eggs with the milk and oil until smooth. (Tip: use a whisk for extra airiness!)


Combine everything: Pour the liquid mixture into the dry ingredients and gently stir with a spatula until a smooth batter forms. Do not overmix to avoid making it dense! If desired, add the cheese or coconut now.


Bake with love:


Pour into the prepared pan and bake for 30-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean. (The aroma will fill the whole house!)


Serve warm:


Let it cool a little, cut into squares and serve with butter, cream cheese or jam. It's delicious with fresh coffee!




For a healthier version, replace half the sugar with honey or sweetener.


Freezes very well:


Cut into pieces and store for up to 1 month.
