Ingredients


(for 2-3 servings):


4 medium potatoes (preferably russet or asterix, with skin on for extra crispiness)

1 teaspoon of salt (or to taste)

Spices of your choice: smoked paprika, garlic powder, black pepper, mixed herbs or oregano (1 teaspoon each)

Optional: a drizzle of olive oil spray (but no liquid oil to keep it zero!)


Simple and foolproof step-by-step:


Preheat the oven: Turn it on to 220°C (fan mode if available, to circulate hot air and "fry" without oil).




Prepare the potatoes:


Wash well and cut into uniform sticks (about 1 cm thick). Soak in cold water for 20-30 minutes (this removes the starch and makes them super crispy!). Drain and dry VERY well with paper towels – the secret to crispiness is zero moisture!


Season expertly:


In a bowl, mix the dry sticks with the salt and seasonings of your choice. Stir well to coat everything. Golden tip: Add 1 tablespoon of wheat flour or cornstarch (cornflour) for an extra boost of crispiness without oil!


Bake like a pro:


Spread the sticks on a baking sheet lined with parchment paper or a silicone mat (no oil!). Leave space between them for air circulation. Bake for 25-35 minutes, turning halfway through. Keep an eye on them for the last 5 minutes to avoid burning – they will be golden and crispy!


Serve hot:


Sprinkle with more salt or fresh herbs and devour with homemade ketchup or yogurt sauce. Calories? Half that of traditional fries!
