Ingredients for the Creamy Avocado Cake


Cake Batter


2 cups all-purpose flour

1 cup brown sugar (or demerara sugar)

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 medium ripe avocados (about 300g of pulp)

3 large eggs

⅓ cup coconut oil (or neutral vegetable oil)

1 tablespoon lemon juice

1 teaspoon vanilla extract





Creamy Avocado Topping


1 large ripe avocado (about 200g of pulp)

200g cream cheese (at room temperature)

½ cup sugar Pastry cream (sifted)

1 tablespoon lemon juice

Zest of 1 lemon (optional, for aroma)


Decoration


(optional)


Thin slices of dehydrated avocado

Baby mint or basil leaves

Drops of melted white chocolate

Use very ripe avocados (soft to the touch), but without dark spots on the flesh. They are the soul of the flavor and creamy texture.
