Corn Soup Boiled in Ash Brings Gastronomic Memories to the Camacha Market
The organizers of the Camacha Market have announced a change to the monthly schedule: the usual appearance of A Biqueira, which normally takes place on the first Sunday of each month, has been moved to next Sunday, November 30th.
This year, the featured dish will be Corn Soup Boiled in Ash, a traditional recipe that, as stated in the press release, “was made by Sandra Cardoso's grandmother and holds a deep connection to the culinary memory of our island.”
It is a dish that “reflects the way of life of our people and the importance of corn in traditional food.” What makes it special is the preparation process of the grain: to remove the “crust,” the film that covers it and makes it indigestible, the corn is boiled in water with sifted household ash, this ash “helping to loosen the crust from the grain.”
After being thoroughly cleaned and washed, the corn is returned to the fire, now accompanied by the other ingredients: salted pork, semolina, beans, carrots, and cabbage. This technique, which uses ash as a cooking tool, is cited as an example of the “total use of resources in traditional Madeiran cuisine.”
Biqueira invites “everyone to gather at the Camacha Market on November 30th, starting at 11:30 am, to savor this dish full of history, a true piece of the island's gastronomic memory.”
