Succulent and Irresistible Pork Stew: The Classic That Melts in Your Mouth! 🐷
Ingredients
(Serves 4-6):
1 kg pork (cut like shoulder or ribs, into large cubes)
500g smoked or Calabrese sausage, sliced
300g diced bacon
4 medium potatoes, peeled and halved
3 carrots, thickly sliced
2 large onions, chopped
4 cloves of garlic, crushed
1 small cabbage, quartered
1 cup cooked white beans (optional, for more substance)
1 tablespoon annatto powder (or smoked paprika)
Salt, black pepper and parsley to taste
1 liter of water or vegetable broth
Olive oil or oil for sautéing
Preparation
(Easy and in one pot!):
Sauté the base:
In a large pot (preferably a pressure cooker for speed), heat a drizzle of olive oil and brown the bacon for 3 minutes. Add the onion, garlic, and sausage, sautéing until fragrant (about 5 minutes).
Season the meat:
Add the pork cubes, paprika, bay leaf, salt, and pepper. Stir well for 5 minutes until the meat is seared and absorbs the flavors.
Cook the essentials:
Add water (or broth) to cover everything. Cover and cook over medium heat for 40 minutes in a regular pot (or 20 minutes in a pressure cooker). The meat should be tender!
Add vegetables:
Open the pot, add potatoes, carrots, and cabbage. Cook for another 20-25 minutes uncovered, until the vegetables are tender but not mushy. If using beans, add them in during the last 10 minutes.
Epic finishing touch:
Taste the seasoning, sprinkle with fresh parsley, and serve warm with white rice or toasted bread. The thick sauce is pure gold!
Golden tip, my friend: Use cuts of meat with fat for an ultra-juicy stew – the fat melts and enriches everything! Total time: ~1 hour 15 minutes. Calories per serving: about 600 (worth every bite). Enjoy your meal, it's going to be a hit at your house! 🐷
