200g of cornstarch cookies (or ladyfinger biscuits)
100g of melted butter
For the creamy filling:
1 can of sweetened condensed milk (395g)
1 carton of heavy cream (200g)
200ml of strawberry juice (or strawberry yogurt for more creaminess)
1 envelope of unflavored gelatin (12g), hydrated in 5 tablespoons of water
300g of fresh strawberries (washed and diced)
For the topping:
200g of whole or sliced fresh strawberries Strawberry jam (optional, for shine)
Preparation method:
Crispy base:
Crush the cookies in a blender until they become crumbs. Mix with the melted butter. Line the bottom of a 20-22cm springform pan and press firmly. Refrigerate for 15 minutes.
Poké Filling:
In a blender, combine the sweetened condensed milk, heavy cream, and strawberry juice. Melt the hydrated gelatin in the microwave (15 seconds) and add to the mixture, blending briefly. Add the chopped strawberries and gently mix with a spatula.
Assembly:
Pour the cream over the chilled base. Make small holes with a spoon to create the "poké" effect (those irresistible holes!). Refrigerate for at least 4 hours (or until firm).
Explosive Finishing Touch:
Carefully unmold. Decorate with fresh strawberries on top, creating a colorful poké look. Brush with warmed strawberry jam for shine (optional).
