Simple and Easy Pasta and Boiled Egg Recipe
Ingredients
(Serves 2):
200g pasta (spaghetti, penne, or string beans, your choice)
2 eggs (or 1 per person, if you prefer)
1 tablespoon olive oil or butter
1 clove garlic (optional, for flavor)
1/2 small onion (optional, for an extra touch)
Salt to taste
Black pepper to taste
1/4 cup grated cheese (Parmesan or mozzarella, optional)
Chopped parsley or chives (optional, for finishing)
Tomato sauce or extra olive oil (optional, for a finishing touch)
Instructions:
Boil the eggs: Place the eggs in a small saucepan, cover with water, and cook over medium heat.
When the water boils, cook for 8-10 minutes (for firm yolks) or 6-7 minutes (for runny yolks).
Cool the eggs in ice water, peel, and cut into slices or chunks. Set aside.
Cooking the pasta:
In a large pot, bring water to a boil with a pinch of salt.
Add the pasta and cook for the time indicated on the package (usually 8-12 minutes, until al dente).
Drain and reserve some of the cooking water (1/4 cup, to adjust the sauce later, if needed).
Preparing the stir-fry
(optional, but adds flavor): In a skillet, heat the olive oil or butter over medium heat.
Sauté the minced garlic and onion (if using) until golden brown (2-3 minutes).
If you prefer a sauce, add 1/2 cup of tomato sauce and stir for 2 minutes. Season with salt and pepper.
Assembling the dish:
Stir the drained pasta into the stir-fry (or just the olive oil, if you prefer it plain).
Top with the boiled egg pieces.
Sprinkle with grated cheese and parsley/chives, if available. If the pasta is dry, use a little of the cooking water to loosen it.
Serve:
Serve hot, with a drizzle of extra olive oil or more pepper if you like a spicy kick.
