Recipe for mixed meat skewers with sauces

Ingredients for the Skewers

Beef: 500g rump or sirloin, cut into 3cm cubes

Chicken: 500g chicken breast, cut into 3cm cubes

Sausage: 400g Tuscan sausage, cut into 4cm pieces

Vegetables (optional): 1 red bell pepper, 1 yellow bell pepper, 1 red onion, cut into large cubes

Seasoning: 4 crushed garlic cloves

Juice of 1 lemon

3 tablespoons olive oil

1 tablespoon smoked paprika

Salt and black pepper to taste

1 teaspoon oregano

Wooden or metal skewers (if using wood, soak in water for 30 minutes to prevent burning)

Preparation

Marinate the meats: In a bowl, combine the garlic, lemon juice, olive oil, paprika, salt, pepper, and oregano.

Divide the marinade into three parts: one for the beef, one for the chicken, and one for the sausage (if you prefer to season it).

Season the meats and let them rest in the refrigerator for at least 30 minutes (ideally 2 hours).

Assembling the skewers:

Skewer the cubes of meat, chicken, sausage, and vegetables alternately onto the skewers. Example: beef, bell pepper, chicken, onion, sausage.

Do not pack the pieces too tightly to ensure even cooking.

Grilling:

Preheat the grill, grill, or skillet over medium-high heat.

Grill the skewers for 8-12 minutes, turning occasionally, until the meats are cooked through (chicken should be well cooked, beef can be medium or rare, depending on preference).

The sausage should be golden brown and crispy on the outside.

Serve

: Remove the skewers from the grill and let them rest for 2 minutes before serving.

Serve with the sauces suggested below.
