Onion-Fried Salmon Fillet with Fried Banana and Salad Recipe
Ingredients
(Serves 2)
For the Fried Salmon and Onion:
2 salmon fillets (4-6 ounces each), skin-on or skinless
1 large onion, thinly sliced
2 tbsp olive oil or butter
Salt and black pepper, to taste
1 tsp garlic powder (optional)
1 tsp paprika (optional)
Juice of 1/2 lemon
For the Fried Banana:
2 ripe but firm bananas, sliced lengthwise or into thick rounds
1 tbsp butter or coconut oil
1 tsp brown sugar or honey (optional, for extra caramelization)
Pinch of cinnamon (optional)
For the Salad:
2 cups mixed greens (e.g., arugula, spinach, or lettuce)
1/2 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 red onion Thinly sliced
1 tbsp olive oil
1 tbsp balsamic vinegar or lemon juice
Salt and pepper, to taste
Instructions
Prepare the Salad:
In a medium bowl, toss the mixed greens, cucumber, cherry tomatoes, and red onion.
Drizzle with olive oil and balsamic vinegar (or lemon juice). Season with salt and pepper to taste.
Set aside in the refrigerator to keep fresh.
Cook the Fried Bananas:
Heat 1 tbsp butter or coconut oil in a non-stick skillet over medium heat.
Add the banana slices and cook for 2-3 minutes per side until golden and slightly caramelized. If using, sprinkle with brown sugar or honey and a pinch of cinnamon for extra flavor.
Remove from the skillet and set aside on a plate, keeping warm.
Cook the Salmon and Onion
: Pat the salmon fillets dry with paper towels. Season both sides with salt, black pepper, garlic powder, and paprika (if using).
In the same skillet, heat 2 tbsp olive oil or butter over medium-high heat.
Add the sliced onion and sauté for 3-4 minutes until soft and slightly caramelized. Push the onions to the side of the skillet.
Place the salmon fillets in the skillet, skin-side down if using skin-on fillets. Cook for 3-4 minutes per side, depending on thickness, until the salmon is golden brown and cooked through (145°F/63°C internal temperature).
Squeeze lemon juice over the salmon and onions just before removing from the heat.
Assemble the Plate
Place a portion of the salad on one side of each plate.
Add a salmon fillet topped with sautéed onions.
Arrange the fried bananas alongside the salmon.
Serve:
Serve immediately while the salmon and bananas are warm. Optionally, garnish with fresh herbs like parsley or dill for extra flavor.
