Meat Croquettes Recipe
Ingredients
(for about 20 croquettes)
: 500g ground beef (rump or rump)
1 small onion, chopped
2 cloves garlic, crushed
2 tablespoons butter
2 tablespoons all-purpose flour
500ml milk
1 egg (for the filling)
Salt and black pepper to taste
Chopped parsley (optional)
1 cup breadcrumbs (for coating)
2 eggs (for coating)
Oil for frying
Preparation:
Cooking the meat:
In a pan, sauté the onion and garlic in butter until golden brown. Add the ground beef, season with salt and pepper, and cook until cooked through and no liquid remains. Set aside.
Preparing the cream:
In the same pan, add the all-purpose flour and stir for 1-2 minutes. Gradually add the milk, stirring constantly to prevent lumps, until a thick cream (béchamel) forms. Stir the cooked meat into the cream. Add parsley, if desired, and adjust the seasoning.
Shaping the croquettes:
Let the dough cool. Once cool, shape into croquettes (small cylinders).
Breading:
Dip the croquettes in flour, then in beaten eggs, and finally in breadcrumbs.
Frying:
Heat the oil over medium heat. Fry the croquettes until golden brown on all sides. Drain on paper towels.
Serving:
Serve hot, accompanied by mustard, mayonnaise, or your favorite sauce.
