 Fava Beans with Chorizo ​​Recipe


Ingredients


(Serves 4)


: 500g fresh fava beans (or frozen if fresh isn't available)

200g chorizo ​​(preferably Portuguese, like meat sausage)

1 medium onion, chopped

2 cloves garlic, minced

2 ripe tomatoes, chopped (or 200g canned peeled tomatoes)

1 bay leaf

100ml white wine

2 tablespoons olive oil

Salt and pepper to taste

Fresh chopped cilantro (optional, to finish)

Water (to cook the fava beans)








Preparation:


Prepare the fava beans: If using fresh fava beans, remove them from the pods and peel the thickest skin (if they are large). If using frozen fava beans, thaw them first. Cook the fava beans in lightly salted water for about 10-15 minutes, until tender but not broken. Drain and set aside.

Cooking the chorizo: Cut the chorizo ​​into slices or small pieces. In a skillet or wide pot, heat the olive oil and fry the chorizo ​​for 3-4 minutes, until it releases its fat and browns slightly. Remove the chorizo ​​and set aside, leaving the fat in the pan.

Sauté the vegetables: In the same pan, add the chopped onion and garlic. Sauté over medium heat until the onion is translucent (about 5 minutes). Add the chopped tomato and bay leaf, cooking for another 5 minutes, until the tomato begins to break down.

Add the ingredients: Add the white wine to the pan, stirring well to release the flavors from the bottom. Let it reduce for 2 minutes. Add the cooked broad beans and the reserved chorizo. Mix well and, if necessary, add a little water (about 100 ml) to create a light sauce. Season with salt and pepper to taste.

Finish: Cook over low heat for 10 minutes, stirring occasionally, to allow the flavors to blend. Taste and adjust seasoning. If desired, sprinkle with chopped fresh cilantro before serving.
