Delicious Chestnut Cake Recipe
Ingredients
(for a cake of approximately 8 servings)
: 300 g cooked and peeled chestnuts (or chestnut puree)
200 g sugar
4 eggs
100 g all-purpose flour
100 g butter (melted)
1 teaspoon baking powder
1 pinch of salt
1 teaspoon vanilla extract (optional)
50 ml milk (optional, to adjust the texture)
Instructions:
Prepare the chestnuts: If using fresh chestnuts, make a slit in each one, cook in boiling water for 15-20 minutes, drain, and peel. Knead until smooth. If using canned chestnuts or puree, skip this step.
Preheat the oven:
Preheat the oven to 180°C. Grease a round cake pan (approximately 22 cm) with butter and dust with flour, or line with parchment paper.
Beat the eggs and sugar:
In a large bowl, beat the eggs and sugar until light and fluffy (about 3-4 minutes with an electric mixer).
Mix the ingredients:
Add the chestnut puree and melted butter to the egg and sugar mixture, stirring well.
Sift the flour, baking powder, and salt together and gently fold them into the batter with a spatula, using gentle movements.
If the batter is too thick, gradually add the milk until smooth.
Add vanilla extract, if desired, for an extra touch of flavor.
Bake:
Pour the batter into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
Finish:
Let the cake cool for 10 minutes in the pan before unmolding. Transfer to a wire rack to cool completely.
Dust with powdered sugar or serve with chocolate sauce, honey, or whipped cream, if desired.
