Delicious Beef and Vegetable Soup Recipe 🍲
Ingredients
(Serves 4):
500g beef (muscle, chuck, or other soup meat, cut into cubes)
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, crushed
2 carrots, sliced
2 medium potatoes, diced
1 zucchini, diced
1 cup green beans, chopped (or other vegetable of your choice)
1/2 cup soup noodles (optional, shell or Ave Maria type)
1 liter water or beef broth
2 ripe tomatoes, chopped (or 1 can of peeled tomatoes)
1 bay leaf
Salt and black pepper to taste
Chopped parsley and chives to finish
1 teaspoon paprika (optional, for color)
Method Preparation:
Preparing the meat:
Season the meat with salt and pepper. In a large pot, heat the oil and brown the meat over medium heat, stirring to sear all sides. Remove the meat and set aside.
Sauté the seasonings: In the same pot, sauté the onion and garlic until golden and fragrant (about 3 minutes).
Cook the vegetables: Add the chopped tomatoes, bay leaf, and paprika (if using). Cook for 2 minutes. Return the meat to the pot and add the water or broth.
Add the vegetables:
Add the carrots, potatoes, zucchini, and green beans. Cook over medium heat for about 20-25 minutes, until the vegetables are tender and the meat is cooked through.
Add the pasta (optional): If using pasta, add it to the pot during the last 8-10 minutes of cooking, checking the cooking time indicated on the package. Adjust the seasoning:
Taste and adjust the salt and pepper. If desired, add more water for a thinner soup.
Finish:
Turn off the heat, remove the bay leaf, and sprinkle parsley on top.
