Delicious Bean Soup Recipe
Ingredients
(Serves 4):
500g beans (can be cooked carioca, black, or red)
1 medium onion, chopped
2 cloves garlic, chopped
1 medium carrot, diced
1 medium potato, diced
1 calabresa sausage (optional), sliced
1 tablespoon olive oil or vegetable oil
1 bay leaf
Salt and black pepper to taste
1 liter water or vegetable/meat broth
Chopped parsley and chives to finish
1 teaspoon cumin (optional, for flavor)
Preparation:
Cook the beans (if not pre-cooked): Soak the beans for 8 hours, drain, and pressure cook with water and the bay leaf for about 20-30 minutes, until tender. Set aside. Sauté the seasonings: In a large saucepan, heat the olive oil and sauté the onion and garlic until golden and fragrant.
Add the ingredients: Add the sausage (if using) and sauté for another 2 minutes. Add the carrots, potatoes, and cumin, mixing well.
Add the beans: Add the cooked beans with a little of the cooking liquid. Top up with water or vegetable/meat broth. Adjust salt and pepper.
Cook the soup: Cook over medium heat for about 20 minutes, or until the vegetables are tender. If you prefer a creamier soup, blend half the beans in a blender and return to the saucepan.
Finish: Turn off the heat, add the parsley, and stir. Taste and adjust the seasoning if necessary.
Serve: Serve hot, accompanied by toast, bread, or croutons, if desired.
