Creamy Dried Fruit Pudding: An Explosion of Flavors! Recipe
Ingredients
(Serves 6):
1 can of sweetened condensed milk (395g)
2 measures (from the can) of whole milk
3 eggs
1 cup of chopped dried fruit (almonds, walnuts, Brazil nuts, and hazelnuts, mixed)
1 teaspoon of vanilla extract
1/2 cup of sugar (for caramel)
2 tablespoons of water (for caramel)
1 pinch of salt
Instructions:
Caramel: In a saucepan, melt the sugar and water over low heat, stirring until a golden caramel forms. Pour into a pudding mold (18 cm in diameter) and spread over the bottom and sides. Set aside.
Pudding: In a blender,
blend the sweetened condensed milk, milk, eggs, vanilla extract, and a pinch of salt until smooth.
Dried Fruits
: Mix the chopped dried fruit into the batter, stirring with a spoon to distribute evenly.
Bake:
Pour the mixture into the caramelized pan. Cover with aluminum foil and bake in a water bath (with hot water) in a preheated oven at 180°C (350°F) for about 1 hour and 30 minutes, or until set (do the toothpick test: it should come out clean).
Cool and Unmold:
Let cool completely, refrigerate for at least 4 hours, and carefully unmold.
Serve: Garnish with more chopped dried fruit, if desired, and serve chilled.
Tip:
For an extra touch, add a tablespoon of almond liqueur to the batter before baking. Enjoy this crunchy, velvety treat!
